If you ever get sick, are going out of town, or just need to take a break, you can stick your starter in the fridge and allow your cultures to take a nap for as long as you need. I’ve gone as long as six months. 😅 I feed a ratio of 1:2:1.3 (ex. 1/2 cup starter to 1 cup flour and 2/3 cup water) out of the fridge and she perked right back up in five consistent feedings. 🤗 I suggest doing a power feeding, every 12-hours (discarding in-between) to help those beautiful cultures wake up faster.
